My Mojo Salsa

2 red capsicum ( also known as bell pepper, paprika)
4 garlic cloves
2 tablespoon sweet smoked paprika
1 tablespoon cumin
generous amount of extra virgin olive oil
1/4 cup sherry vinegar
good pinch of salt

Char grill the capsicums so the skin is entirely black, I prefer on an open flame on the stove, you can do this in the oven on the grill setting or on the BBQ/ barbie. Place the capsicums in cold water and peel off the skin and remove seeds/ stalk

Add all the ingredients into a blender until smooth, I add the vinegar in small amounts till I like the flavour, if you’ve found yourself in a position that you have gotten a little excited with the vinegar, try add a bit of sugar, that may help

Pro tips
I found Pedro Ximenez sherry vinegar to be the best, lime or red wine vinegar works just as well

Don’t even try using smoked paprika, sweet smoked paprika is just too good
if you’re like me and hate to measure and you have a sauce that’s too sour/ vinegary, I combined mine with some chipotle and oregano and used that as a sauce base for some slow cooked beef or lamb
