1 tablespoon dried thyme (can substitute with oregano)
1 tablespoon cumin
1 tablespoon coriander
1 tablespoon toasted sesame seeds
1 tablespoon sumac
Teaspoon salt
Combine ingredients and enjoy

this recipe is equal amounts of each ingredient, increasing the amount of thyme and cumin will give it a more favourable taste, I’m yet to meet someone who doesn’t like cumin
many chefs just use thyme or a blend of thyme and oregano. Marjoram can also be used and I prefer to use marjoram over oregano purely because it has citrus undertones (sounds like I’m reading a wine bottle), and originates from the middle east
Ottolenghi, famous for his book Jerusalem, has a za’atar recipe very similar to this however without the coriander
