handful of tomatoes
1 cucumber, Lebanese is best
shallot or red onion
large amount of parsley and coriander (more parsley is best)
sumac pepper
extra virgin olive oil
lemon
cut all ingredients and mix well in a bowel before adding oil and lemon. Add lemon as desired, I usually use a whole lemon

this can easily be made into a warm salad or a grain salad, I sometimes add quinoa, cous cous or baharat spiced chickpeas
this salad goes really well with rich or spicy dishes such as lamb, rice or lentils and yogurt based dips compliment this really well too!
