Flammkuchen

300 grams flour
125 mls sparkling water
pinch of salt
4 tablespoons oil
creme fraiche or sour cream
bacon
2 red onions
lots of cheese

Mix the flour, water, salt and oil till well combined
Roll out very thin, the thinner the better
Heat oven to 200 degrees with circulating air
put the rest of the ingredients on top and cook for about 10 – 15 minutes or till edges are brown

This is the German take on pizza and this is my favourite topping to have on it, my friends from Berlin showed me this recipe and is very close to my heart
The only variation I do for flammkuchen is caramelising the onions before I put it in the oven, because I’m addicted to caramelised onions
If the base is too thick it won’t cook properly and tastes a little like uncooked bread, but the top will be done, I roll it out in a rectangle like they do in Berlin but if you have a pizza stone then feel free to roll it out in a circle to cook the base better
If you cant say flammkuchen its perfectly acceptable to call them flame cakes!
