Lamb Tostadas

1 lamb leg

Chipotle sauce
1 tin chipotle with adobo
2 tablespoons sherry vinegar
small handful fresh oregano chopped
4 garlic cloves minced
salt
pepper

Guacamole
4 avocados smashed
2 limes juiced
1 bunch corriander finely chopped
1 red onion finely diced
for a kick I add some pickled Jalapeños or a few spoons of a spicy green salsa like tomatillo salsa

To serve
My mojo salsa
Tostadas

For the meat
slow roast the leg of lamb covered in tin foil or make sure its covered with a small amount of water at 120 degrees, I like to slow roast fro about 12 hours, that’s the point where you can pull it apart with forks
When its done mix with the chipotle sauce

For chipotle sauce
mix all ingredients and fry on a pan on a medium heat for about 5 minutes, I leave the sauce in the pan and add the meat to the pan when its done

For the guacamole
combine ingredients well and season with salt and pepper, I like my guac very fresh so I always add in lots of lime but feel free to make it to your taste

I build the tostadas with guac first, meat, mojo salsa and coriander on top

Notes
this is probably one of my best dishes I have made, everyone loved it, it was a great combination of salty, spicy, sour and fresh. I made this for my brothers birthday and we actually smoked the lamb instead of slow cooking in the oven which gave it a much different taste and texture, If you can I recommend smoking!
I always make my sauces without measuring, so this is a rough guide, have a play with the recipes
